"As I recall, there was some use of this in Niven and Pournelle's Oath of Fealty; I think that the cafeteria was in an interior room. The room was made to seem larger by putting in a huge flat panel screen that just mirrored a scene from outside."

"There was Bradbury's "The Illustrated Man" published, I believe, in the 60's. It's a collection of short sci-fi stories, one of which involved a "rec room" of sorts in the modern home that had walls and ceiling made to transmit realistic-looking settings for the children to play in. For example, the kids could pretend to be knights fighting in 12th century England, surrounding be realistic images of the forest, the castle, and people of that era. The parents of the children playing in this simulated rec room become increasingly alarmed at the way the lions are looking at the children in the kids' favorite "Africa motif" setting, and they decide to forbid the kids from playing in the 'Africa setting'. I won't spoil the ending ... "

"Bo - you're right, I'd forgotten about that one. Bradbury even specifically describes the ceiling -
'...the walls began to purr and recede into crystalline distance, it seemed, and presently an African veldt appeared, in three dimensions, on all sides, in color reproduced to the final pebble and bit of straw. The ceiling above them became a deep sky with a hot yellow sun...
(Read more about The Veldt from Ray Bradbury's 1951 story of the same name.)

"Don't forget the 60's movie Solient Green where people about to be processed for food got to hang out in a totally beautiful simulacra of natural space - a place that was like the world used to be."
